Notes from the Winemaker: The word ÁME is French for "soul". It's something any winemaker or grape grower wants in their final wine. While developing the Cabernet Sauvignon vineyards on our Conn Valley ranch, it became apparent that one parcel in particular stood out above the rest - literally as well as figuratively - given it was the highest elevation and rockiest parcel on the property. It took four years to develop, due to the rock removal and the steepness of the slopes. The results were worth the effort. We found that out in 2005 when the Cabernet Sauvignon crop from this block proved to be not only darker and more intense but dramatically different in aroma and flavor. We bottled it separately and called it Áme, for some our soul is certainly in it. It's important to us as well that there's some recognition of our three children, Alexandra, Michael and Elizabeth, whose first name initials make up the word.
For optimal tasting, open this bottle one hour before serving, or decant.
