Tasting Notes The whole bunches were pressed, juice was settled, racked and inoculated. The cool ferment in stainless steel helped to retain the fragrant fruit characters. A short maturation on lees with stirring contributed to texture and length in the mouth. Fresh snow peas, pineapple and lime aromas feature in this LIME ROCK 2011 Sauvignon Blanc. The wine has beautifully balanced acid with long lasting flavours and minerality that puts backbone into the wine.
