Notes from the Winemaker; The Pouilly Fume grape, Sauvignon Blanc, has egg-shaped berries in tight clusters resembling eggs. When mature these berries are covered in a smoke-colored, grey bloom, which explains why The Pouilly wine growers talk among themselves about Blanc Fume (smoke white). The word “Fume” also refers to the incomparable universally recognized aromas and bouquet (or fumet- smoked aromas- the famous gun flint aroma, released by rubbing 2 flints together), which comes from Pouilly vineyards.
