Tasting Notes: Grapes are 100%hand harvest brought to the pneumatic press every 45 minutes in a small baskets to keep them fresh before crushing. No yeast added to start the fermentation 70% of the cuvee is place in themo regulated stainless steel tanks and 30%new and 1 year old barrels. The fermentation will take place at temperature lower than 75 degree. For maturing, the process consist of batonnages until spring. After the malo-latic fermentation in May- June, the wine is then placed in tanks. Yellow pale in color. The nose shows notes of citrus, white flowers as well as peach and pear accompany by minerality. It is elegant, well balance with aging evidence.
