Tasting Notes: Our winemaker is intently focused on picking when the acids soften and the fruit flavors are at their richest, well before they start to shrivel. After picking, the grapes were sorted and de-stemmed into a fermentation tank where they rested and soaked for for an average of 3 to 4 days. After a warm fermentation, they were gently pressed and stopped as soon as any harsh tannin was perceived. Sur Lie stirred and aged for up to 6 months, with continued barrel aging for a total of 16 months.
