It finishes with a burst of fruit. "Mark Herold’s objective is to produce intense, highly extracted, terroir-driven wines. In the vineyard, he fastidiously monitors the vines, adjusting canopy, irrigation, cover crops and cluster architecture vine by vine to promote the overall site signature as well as the more nuanced character of the individual blocks. In the cellar, Mark favors a cutting edge approach informed by science and accented by sheer sensual appreciation. Small capacity fermentation tanks, carefully timed punch - downs, a mix of native and cultured yeasts, and tight grained cooperage result in signature wines noted for their opulence and longevity."
