Notes from the Winemaker: A fascination with Ribera del Duero led Steven Ventrello to launch Parador to make Tempranillo and Cabernet Sauvignon in Napa Valley. Parador speaks to its wine's aging process. "Our RESERVA wines are made with the inspiration of classic European (Spain & Italy) reserve cuvees. Since California has no rules on reserve wines, ours is based on the following criteria: Barrel selection - culled from the production of the vintage and aged an additional year (three in total) before bottling. Then aged a minimum of five years in bottle before release. Our Reserva method goes beyond any established laws of Europe, truly aging the wine prior to release. 52% Tempranillo / 48% Cabernet Sauvignon"
